Heritage Cider-Apple Variety: Newtown Pippin 

Hand-picked Newtown Pippin apples from mature, low-intervention orchards in Sebastopol, California, are crushed and wild-fermented with the skins, seeds and stems. This extended maceration enhances complexity, extracting the full character of the fruit. Unfined and unfiltered, the cider is bottled before primary fermentation finishes, resulting in  a softly sparkling expression of terroir, time and place.
