A collaborative West Coast Style Pilsner with Grapefruit and Koji Rice

This brew was created with Takuya from Choryo Brewing in Japan. This West Coast Pilsner is clean and crisp, yet decadent and citrusy. The recipe features white and yellow koji rice, traditional sake ingredients: the white koji provides natural lactic acid for precise pH balance, while the yellow koji contributes vibrant fruity esters. To complement the rice and grapefruit purée, we dry-hopped it with Citra, Simcoe, Columbus, and Cryo Chinook.
